Elegant seafood soup
I don't actually remember making this soup, but there it was in my computer, with a note about how good it was. So I figured, I may as well include it in this site. Let me know if you like it!
Ingredients:
- 1 tablespoon olive oil.
- 1 medium size onion.
- 3 garlic cloves, minced.
- 1 cup Clamato juice.
- 2 cups water.
- 1/2 cup dry white wine.
- 1/2 tsp tabasco sauce.
- 1/4 cup orzo or quick cooking rice.
- 1/2 pound frozen shrimps.
- 2 green onion.
Instructions:
- Heat oil in a large saucepan set over medium-high heat.
- Add onion and garlic and stir occasionally until onion starts to soften, about 2 minutes.
- Add Clamato juice, water, wine, tabasco sauce and orzo.
- Bring to a boil, then reduce heat to medium and boil gently, uncovered and stirring often, until orzo is almost cooked, about 8 minutes.
- Stir in shrimps, cover and continue to cook until shrimps turn pink.
- Salt, pepper.
- Stir in green onions and serve the day it is made but leftovers can be refridgerated for up to one day.
