Cauliflower and cran Orecchiettes (version française, cliquer ici)
Dad asked me for the recipe I did at the condo in Tremblant last week, so I decided to place it on chefalain so everyone can have it!
Ingrédients:
- 1/2 onion, slices (sliced, not chopped)
- 1lbs spicy pancetta
- 1/2 cauliflower, broken up in little florets
- 1 clove garlic, chopped
- 1/3 cup 15% cream
- 1/2 cup parmesan, grated or shaved
- Salt and pepper to taste
- Orecchiettes (little ear-shaped pasta, but you can also use small shells).
Instructions:
- Cook pasta 3 minutes less than the time indicated on packaging. Drain, keeping aside 1/3 cup of the water.
- Meanwhile caramelize oinion and cauliflower (in butter).
- Add garlic and pancetta at the end and cook a little while more.
- Add pasta and reserved water, until water has evaporated.
- Add cream and parmesan. Simmer on low until you obtain a creamy sauce.
- Season to taste.
