Carole's veal and vegetable stew
As a vegetarian, you can imagine that I haven't actually tried this recipe yet. However, I received glowing reports from other family members, so give it a try!
Ingredients:
- 2 tablespoons vegetable oil.
- 4 tablespoons butter.
- 3 lbs veal cubes.
- 3 medium onions, chopped.
- 2 cloves garlic, smashed.
- 2 medium carrots.
- 3 cups mushrooms, sliced.
- 1/4 cup parsley, chopped.
- 1 bouquet garni (click here if you don't know what this is).
- Salt, pepper to taste.
- 2 cups chicken broth.
- 3 tablespoons butter/flour mixture (half butter, half flour).
- 1/2 cup 35% cream.
Instructions:
- Pan fry veal with oil and half the butter, until golden. Set aside.
- Add rest of butter and sauté vegetables on medium-high.
- Add veal and add seasoning ingredients. Stir well.
- Pour in chicken broth and bring to a boil.
- Scrape bottom of pan to deglaze well.
- Reduce to low heat and simmer for 1 hour and 15 minutes, until veal is tender.
- Prepare the butter/flour mixture and add to sauce to thicken, stir well.
- Add cream just before serving.
