Fruitcake
I got this recipe from my Dad, but the recipe header said something about aunt Gisèle. Which may have meant that it came from my cousin. Not sure. I know fruitcake is mocked a lot, but I happen to like it a lot. Enjoy!
Ingredients:
- 2 cups white sugar.
- 1 ½ cups melted butter.
- 2 cups molasses.
- 1 cup milk.
- 5 eggs.
- 1 teaspoon baking soda.
- 1 teaspoon cinnamon.
- 1 teaspoon cloves.
- 1 teaspoon allspice.
- 1 teaspoon nutmeg.
- 4 cups flour.
- 1 lb Corith raisins.
- 1 lb raisins.
- ½ lb mixed peel.
- ½ lb walnuts.
- ½ lb multi colour cherries.
Instructions:
- Mix sugar, butter, molasses, eggs and milk.
- In a separate bowl, mix flour, spices, raisins and fruit.
- Make sure to coat the fruit with the flour.
- Grease 4 small cake pans.
- Mix the liquid (first step above) with the solids (second step above) and mix well.
- Bake at 250F for at least 4 hours.
- When the cakes are done, remove from pans and brush with Cognac or Rum.
- Store in sealed containers.
