Zucchini pecan muffins
Muffins. Oh, yummy muffins. Zucchini muffins are probably my favourite. Love 'em! As I write this, I've decided to bake some right after I'm done this page!
Ingredients:
- 2 eggs.
- ¼ cup of canola oil.
- ¾ cup of sour cream.
- ½ cup of grated zucchini.
- ½ cup of flour.
- ½ cup of yellow cornmeal.
- 1/3 cup of sugar.
- 2 tablespoons of baking powder.
- ¼ cup of chopped pecans.
Instructions:
- Combine eggs, canola, sour cream and grated zucchini.
- Combine flour, sugar, baking soda and pecans.
- Mix dry and wet ingredients.
- Grease muffin pan and cook for 25 to 30 minutes at 350F.
- Makes 9 muffins.
