Guy's Meatballs with pasta

What is celebrity chef and renowned restauranteur Guy Rubino doing on this website? Well, beside being an amazing chef, he's also my brother's friend and bandmate. Guy graciously let us have his meatballs and pasta recipe so everyone can try it at home! Thanks Guy!

Ingredients - Meatballs:


  • Ratio 1/3 Veal, 1/3 Pork, 1/3 Beef,  say 4oz of each.
  • 1/4 cup bread crumbs.
  • 1 tablespoon of fresh rosemary.
  • 2 tablespoons of fresh cut parsley.
  • 1 egg, beaten, season with salt and pepper.
  • 1/4 cup grated parmesan cheese.

Instructions - Meatballs:

  • Mix all into a bowl.
  • Form into size you prefer.

Ingredients - Tomato sauce:


  • 1 can of san marizano tomatoes whole and peeled (make sure their from Italy). 
  • 1 bottle of tomato puree, again make sure they are Italian.
  • I large carrot cut  roughly in to large pieces ( just to add natural sugars not for eating unless u want to....). 
  • I white onion chopped finely. 
  • 4 cloves of garlic chopped finely. 
  • 2 tablespoons of rosemary.
  • 2 tablespoons or oregano. 

Instructions - tomato sauce and meatballs:

  • Line the bottom of a stock pot with olive oil on med high heat.
  • Add the garlic, onions and carrots saute until the onions are translucent but be careful not to burn the garlic.
  • Add the peeled tomatoes the half a bottle of the tomato puree. 
  • Leave still to a low boil and try and roughly crush the peeled tomatoes with a fork or spoon.
  • Add the rosemary and oregano  and let it sit at a low boil for 30 minutes.
  • Add the meatballs raw into the sauce let it sit low boil for another 25 minutes.
  • Season with salt and pepper and have with your fave pasta....
