Mom's pineapple chicken
The joke in my house, is that I have made these countless times, when in fact, I have made them only once (if that). But I recall my mother's amazing pineapple chicken, which usually went along with other Chinese classics.
Ingredients:
- 2 eggs.
- 1/2 cold water.
- 1 cup flour.
- 1/4 teaspoon baking powder.
- 1/2 teaspoon salt.
- 2 chicken breasts.
- Oil for frying.
- VH pineapple sauce (orange) or cherry sauce and add canned pineapple (quarters, with not too much sauce).
Instructions:
- Mix all ingredients except chicken and sauce with mixer.
- Cut chicken in cubes.
- Dip chicken in mixture.
- Fry in oil.
- Pat with paper towel.
- Put in Pyrex dish and in oven at 300 degrees to keep the warm until all pieces are done frying.
- Mix sauce with pieces JUST before serving.
